Kashmiri Mutton Rogan Josh Recipe
कश्मीरी मटन रोगन जोश Kashmiri Mutton Rogan Josh Recipe in Hindi
Ingredients
● 750gm मटन
● 1कप दही
● 1 बड़ी इलायची
● 4 छोटी इलायची
● 3 लौंग
● 1 इंच दालचीनी
● 1 तेज़ पत्ता
● थोड़ी सी केसर
● 1/2tsp हींग
● 1tbsp सौंफ पाउडर
● 1tsp सौंठ पाउडर
● 1.5tbsp कश्मीरी लाल मिर्च
● 1tbsp धनिया पाउडर
● 1/2tsp जीरा पाउडर
● 1/2tsp गरम मसाला
● नमक
● 1tsp जीरा
● 3tbsp सरसों का तेल
● 2tbsp देसी घी
● थोड़ा सा *रातनजोग* (यह एक मुख्य इंग्रीडिएंट है,जिससे रोगन जोश का सुर्ख लाल कलर आता है,यह एक पेड़ की छाल होती है और आपको किसी भी मसालों की दुकान पर आसानी से मिल जाएगा)
Method
● हींग को छोड़कर बाकी सारे पाउडर मसाले और केसर दही में मिलाकर दही को फेंटकर रख दें
● कढ़ाही में सरसों का तेल स्मोकी पॉइंट तक गरम करके गैस बंद करें और तेल को थोड़ा ठंडा होने दें ( इससे सरसों तेल की कडुवाहट निकल जाती है)
● अब गैस वापस चालू करके,सारे खड़े मसाले और हींग डालें,थोड़ा भुनने के बाद मटन को डालकर 7 से 8 मिनट तेज़ आंच पर मटन को भूनें
● मसालों वाली दही मिलाकर वापस 2 से 3 मिनट भूनें
● एक अलग पैन में 2tbsp घी को रातनजोग के साथ पकाएं,इससे रतन जोग का सुर्ख लाल कलर घी में आ जायेगा
● अब रातनजोग वाला घी छानकर मटन में डालें,साथ में लगभग 300ml पानी डालकर ढककर मंद आंच पर 45/50मिनट पकाएं (आप चाहें तो इसे प्रेशर कुकर में भी पका सकते हैं,पर इस तरह कढ़ाही में मंद आंच पर पकाने पर मटन का स्वाद कुछ अलग ही आता है)
● स्वाद अनुसार नमक डालें 2mnt पकाकर गैस बंद करें

Ingredients
● 750gm mutton
● 1 cup yogurt
● 1 large cardamom
● 4 small cardamom
● 3 cloves
● 1 inch cinnamon
● 1 bay leaf
● A little saffron
● 1 / 2tsp asafoetida
● 1tbsp fennel powder
● 1tsp ginger powder
● 1.5tbsp Kashmiri Red Chili
● 1tbsp coriander powder
● 1 / 2tsp cumin powder
● 1 / 2tsp garam masala
● salt
● 1tsp cumin
● 3tbsp mustard oil
● 2tbsp desi ghee
● *Ratanzog* (this is the main ingredient that gives a bright red color to Rogan Josh, it is the bark of a tree and you will find it easily at any spice shop)
*Method*
● Except asafetida, mix all the powdered spices and saffron curd and whisk the curd.
● Turn off the gas by heating the mustard oil to the smokey point in the pan and allow the oil to cool down a bit (this removes the mustard oil)
● Now turn the gas back on, add all the whole spices and asafoetida, after roasting a little, add the mutton and fry the mutton on high heat for 7 to 8 minutes.
● Fry yogurt with spices and fry back 2 to 3 minutes
● In a separate pan, cook 2tbsp ghee with ratanjog, this will bring the red color of rattan jog to ghee.
● Now filter the ghee with rattanog and put it in the mutton, cover it by adding about 300ml water and cook it on a slow flame for 45/50 minutes (you can also cook it in a pressure cooker, but in this way the taste of mutton when cooked on low heat in the pan Something different comes)

INGREDIENTS
Ghee - 30 grams
Onions - 100 grams
Bell Pepper - 400 grams
Green chili - 1 tablespoon
Salt - 1 1/2 teaspoons
Coriander powder - 1 teaspoon
Cumin powder - 1 teaspoon
Garam masala - 1 teaspoon
Red chili - 1 teaspoon
Chilli flakes - 1 teaspoon
Spring onions - 2 tablespoons
Chicken keema - 480 grams
All purpose flour - 250 grams
Salt - 1 teaspoon
Carom seeds - 1 teaspoon
Water - 150 milliliters
Oil - for frying
PREPARATION
1. Heat 30 grams ghee in a skillet, add 100 grams onions and fry till translucent or until it turns golden brown in color.
2. Then, add 400 grams bell pepper and mix it well.
3. Cook for 5 - 7 minutes on medium heat.
4. Add 1 tablespoon green chili, 1 1/2 teaspoons salt, 1 teaspoon coriander powder, 1 teaspoon cumin powder, 1 teaspoon garam masala, 1 teaspoon red chili, 1 teaspoon chilli flakes and mix it well.
5. Add 2 tablespoons spring onions and mix it again.
6. Now, add 480 grams chicken keema and mix it well.
7. Cover it with lid and cook for about 15 minutes on medium heat.
8. Open the lid and give it a nice stir.
9. Cook for another 3 - 5 minutes on medium heat.
10. Remove it from heat and keep aside.
11. In a mixing bowl, add 250 grams all purpose flour, 1 teaspoon salt, 1 teaspoon carom seeds and mix it well.
12. Now, add 150 milliliters water and knead it into a smooth soft dough.
13. Rest the dough for 20 minutes.
14. Take a ball from dough and dust it with flour.
15. Flatten the dough ball with the help of a rolling pin.
16. Place some prepared chicken mixture on it.
17. Close the dough like potli.
18. Heat sufficient oil in a heavy skillet and deep fry these till golden brown and crispy.
19. Serve hot with ketchup.

‘Tamarind paste - 50 grams
PREPARATION
1. In a mixing bowl, add 70 grams gram flour, 70 grams rice flour, 1/2 teaspoon salt, 1/4 teaspoon baking powder and mix it well.
2. Add 300 milliliters water and make a batter.
3. Now, boil 800 milliliters water in a pan, add 250 grams sweet corn and let them boil until tender.
4. Then, transfer it to a blender, add 2 tablespoons green chili and blend it to a smooth paste.
5. In a another mixing bowl, add 150 grams all purpose flour, 1/2 teaspoon salt, 1/2 teaspoon black pepper, 1 teaspoon powdered sugar, 1/2 teaspoon baking soda, 2 tablespoons coriander, 2 tablespoons lemon juice, blended corn paste and make a smooth dough.
6. Take small quantities of the freshly prepared dough and roll them into the shape of cylinders.
7. Dip each roll into the prepared batter and then dip it in bread crumbs.
8. Heat sufficient oil in a skillet and deep fry these until golden brown and crispy.
9. Drain it on an absorbent paper.
(For Chutney)
1. In a mixing bowl, add 25 grams coriander, 25 grams mint, 75 grams onions, 100 grams apple, 2 tablespoons jaggery, 1/2 teaspoon salt, 50 grams tamarind paste and blend it to a smooth paste.

PREPARATION
1. In a mixing bowl, add 100 grams red lentils, 250 grams split pigeon peas, 500 milliliters water and soak for 30 minutes.
2. Take a pressure cooker, add soaked dal, 1/2 teaspoon turmeric, 1/2 teaspoon salt, and mix it well.
3. Cover it with lid and cook till you hear 1 whistle.
4. Open the lid and remove it from heat.
5. In a pan, add 6 pods green cardamom, 10 pods black peppercorns, 4 cinnamon stick, 8 pods cloves, 2 pods black cardamom, 1 teaspoon cumin, 1 star anise, 1 teaspoon fennel seeds and roast them.
6. Then, add the roasted whole spices into a blender and blend it to fine powder.
7. Heat 50 milliliters ghee in a pressure cooker, add 180 grams onions and fry it till translucent.
8. Add 2 bay leaf, 1 tablespoon green chili and fry for few seconds.
9. Now, add 800 grams mutton and saute for 1 - 2 minutes.
10. Then, add 1 tablespoon ginger paste, 1 tablespoon garlic paste and sauce for another 2 minutes.
11. Add 300 grams tomato saute until it turns soft and pulpy.
12. Then, add 2 teaspoons red chili, 1 teaspoon turmeric, 1 teaspoon coriander powder, prepared blended masala and mix it well to combine.
13. Add 400 milliliters water Cover it with lid and cook till you hear 5 - 7 whistles.
14. Now, add cooked dal, 1 teaspoon salt and mix it well.
15. Add 2 tablespoons coriander and bring it to a boil for 5 - 7 minutes.
(For Tadka)
1. Heat 20 milliliters ghee in a pan, add 1 teaspoon cumin seeds and allow it to crackle.
2. Now, add 1 tablespoon garlic and fry another few seconds.
3. Add 4 dry red chili and saute for 1 minute.
4. Add 1/2 teaspoon red chili and mix.
5. Now, pour the tadka over the dal gosht.
6. Serve hot.

1. In big mixing bowl, add 1 kilogram chicken keema, 60 grams fine grated carrot, 60 grams finely chopped onions, 1 tablespoon green chili, 2 tablespoons coriander, 1 teaspoon soy sauce, 20 grams red chili sauce, 25 grams Thai chili sauce, 1 tablespoon ginger garlic paste, 1 teaspoon red chili powder, 1/2 teaspoon turmeric, 1 teaspoon salt, 20 grams corn flour, 40 grams bread crumbs and mix it well.
2. Refrigerate for 1 hour.
3. In mixing bowl, add 25 grams corn flour, 1/4 teaspoon salt, 1/2 teaspoon black pepper, 30 milliliters water and mix it well to make a paste.
4. Take 100 grams corn flakes and blend it in a blender to make a powder.
5. In a mixing bowl, corn flakes powder, add 70 grams bread crumbs, 1 teaspoon salt, 1 tablespoon mixed herbs and mix it well.
6. Take some keema mixture in your hands and stick it to pop sticks.
7. Dip it in prepared all purpose flour mixture.
8. Then, roll it in prepared corn flakes mixture and Coat it completely.
9. Heat sufficient oil in heavy skillet and deep fry until golden brown and crispy.
10. Drain it on an absorbent paper.
11. Garnish with coriander.

Peanuts - 85 grams
Cashews - 40 grams
Onions - 135 grams
Tomato - 150 grams
Cucumber - 135 grams
Boiled potatoes - 200 grams
Lemon juice - 2 tablespoons
Green chili - 2 teaspoons
Chaat masala - 1 teaspoon
Salt - 1 teaspoon
Coriander - 3 tablespoons
PREPARATION
1. Take a papad and place it on a hot tawa and cook for 2 - 3 minutes on moderate heat from both sides until it turns golden brown in color.
2. Take a pan, add 85 grams peanuts and dry roast till it turns golden brown in color.
3. Remove it from heat and keep aside.
4. Take a another pan, add 40 grams cashews and dry roast till it turns golden brown in color.
5. Remove it from heat and keep aside.
6. 3. Cook till you hear 5 - 6 whistles.
4. Open the lid , add 100 grams onions, 2 teaspoons green chili, 2 teaspoons ginger, 70 grams tamarind chutney, 5 grams coriander, 1/2 teaspoon salt, 1 teaspoon black salt, 1 teaspoon cumin powder, 1/2 teaspoon red chili and mix all the ingredients well.
5. Garnish with onions and coriander.

Wheat flour - 200 grams
All purpose flour - 100 grams
Corn flour - 30 grams
Salt - 1/2 teaspoon
Carom seeds - 1/4 teaspoon
Ghee - 50 milliliters
Water - 200 milliliters
Potato sev - 45 grams
Bikaneri sev - 45 grams
Boondi - 30 grams
Fried whole red lentils - 30 gram
Onions - 115 grams
Tomato - 125 grams
Coriander 5 grams
Lemon juice - 2 tablespoons
Chaat masala - 1 teaspoon

PREPARATION
1. In a mixing bowl, add 200 grams wheat flour, 100 grams all purpose flour, 30 grams corn flour, 1/2 teaspoon salt, 1/4 teaspoon carom seeds, 50 milliliters ghee and mix it well.
2. Now, add 200 milliliters water and knead it into a smooth dough.
3. Rest for 20 minutes.
4. Now, in a another mixing bowl, add 45 grams potato sev, 45 grams bikaneri sev , 30 grams boondi, 30 grams fried whole red lentils, 115 grams onions, 125 grams tomato, 5 grams coriander, 2 tablespoons lemon juice, 1 teaspoon chaat masala, 2 teaspoons red chili and mix it well to combine.
5. Now, take a small dough ball and roll with rolling pin.
6. Sprinkle flour on Plain surface and flatten dough with baking roller in round shape
7. Make long stripe cuts with help of knife.
8. Then, prick it with fork all over it.
9. Take a aluminium cone and roll the dough stripes around the aluminium foil cone.
10. Heat sufficient oil in a heavy skillet and deep fry these until golden brown and crispy.
11. Then, take a fried cone out from foil paper and add prepared chaat in it with spoon.
12. Serve.

1. Take a pressure cooker, add 800 milliliters water, 500 grams potatoes and cover it with lid.

4. Drain and peel them off.
5. Mash the potatoes with the food masher and keep aside.
6. Heat 1 tablespoon oil in a pot, add 80 grams onions and fry till translucent.
7. Then, add 2 teaspoons ginger, 2 teaspoons green chili and saute for a minute.
8. Now, add 400 grams tomato and mix it well.
9. Cover it with lid and cook for 5 - 7 minutes.
10. Open the lid and give it a nice stir.
11. Add 500 grams boiled mashed potatoes and mix it well.
12. Then, add 1 teaspoon garam masala, 1 teaspoon cumin powder, 1 teaspoon chaat masala, 1/2 teaspoon black salt, 1 teaspoon red chili, 1 teaspoon salt and mix it well.
13. Cook for another 3 - 5 minutes.
14. Remove it from heat.
15. Squeeze a lemon over it.
16. Garnish with namak para, sev and coriander.

● 3 प्याज
● 12 से 15 बादाम
● 12 से 15 काजू
● 2tbsp नारियल पाउडर
● 1कप दही
● 3tbsp फ्रेश क्रीम
● 3 लौंग
● 4 हरी इलाइची
● 1 बड़ी इलायची
● 2 तेज़ पत्ता
● 2" दालचीनी
● 1 जावित्री
● 1tsp काली मिर्च के दाने
● 1tsp जीरा
● 2tbsp धनिया पाउडर

Method
● 2tbsp तेल गरम करके सारे खड़े मसलों के साथ प्याज को ब्राउन होने तक भुनिये और पेस्ट बनाकर रखिये
● चिकन को 1tbsp अदरक लहसुन पेस्ट,हल्दी,1tspलाल मिर्च, 1tbsp धनिया पाउडर,जीरा पाउडर के साथ 30 mnt मेरिनेट करके रखिये
● बादाम को ब्लांच करके उसकी स्किन निकाल लीजिए और काजू,नारियल पाउडर दही के साथ मिलकर पीसकर पेस्ट बनाइये
● बचा हुआ तेल कढ़ाही में डालकर चिकन को तेज आंच पर 5 से 7 मिनट भूनकर निकालकर अलग रखिये
● अब उसी तेल में 1tbsp अदरक लहसुन पेस्ट भूनिये फ़ी प्याज की पेस्ट और काजू बादाम की पेस्ट को सारे पाउडर मसालों के साथ तेल अलग होने तक भूनिये
● चिकन ऐड करके 2mnt भूनिये,फिर 500ml पानी डालकर ढककर 10 से 15 mnt मंद आंच पर पकाइये
● फ्रेश क्रीम,नमक,गरम मसाला,केवड़ा जल,जायफल पाउडर और हरा धनिया डालकर 2 से 3mnt पकाकर गैस बंद करिये

कटोरी बनाने के लिए--
1 कप मैदा
1 छोटी चम्मच अजवाइन
स्वादानुसार नमक
2,3 छोटी चम्मच घी
आवश्यकता अनुसार घी तलने के लिए
भरने वाली सामग्री-
1/2 कप स्प्राउट्स मूंग
1/2 कप छोला चना (उबले हुए)
2,3 उबले आलू
1/4 कप अनार दाना
1/4 कप प्याज
1/4 कप टमाटर
1/4 कप प्याज
2,3 छोटी चम्मच हरी मिर्च धनिया पत्ती चटनी
3,4 छोटी चम्मच इमली चटनी
2 छोटी चम्मच चाट मसाला
स्वादानुसार नमक
3,4 पपड़ी

1/2 कप ताजा दही
तरीका
सबसे पहले मैदा में नमक,अजवाइन मिला ले उसके बाद घी मिला ले और थोड़ा थोड़ा पानी डालकर आटा गूंथ लें
इसके बाद इसमे से लोइ ले और न ज्यादा पतली और न ज्यादा मोटी रोटी की तरह बेल लें!
एक कटोरी में पीछे के तरफ थोड़ा घी लगाए और रोटी को इसके ऊपर फैला दे।
उसके किनारे ज्यादा निकली हुई रोटी को काट दे।
काटे वाली चम्मच से रोटी में निशान बना दे। जिससे कि पूरी फूल न जाये।
पैन में घी गरम करे और कटोरी को इसमे डाल दें धीमी आंच पर दोनो तरफ से तल लें कटोरी पूरी को छोड़ देगी उसे बाहर निकाल लें।
एक कटोरी बनने में 10,12 मिनट का समय लगता हैं।
कटोरी में सबसे पहले चना डाल दें और उसके ऊपर नमक इसके बाद स्प्राउट्स और चाट मसाला डाल दें।
इस तरह से सभी सामग्री को इसमे डाल दें ।
ऊपर से दही चटनी और सेव डालकर परोसे स्वादिष्ट चाट।

● नॉनस्टिक पैन में बटर गरम करें,फिर प्याज और गोल चिप्स के आकार में काटा हुवा आलू डालकर आलू को पकने दें
● लंबी कटी हुई शिमला मिर्च,हरी मिर्च,हरा प्याज डाले और बचे हुवे सारे पाउडर मसाले डालकर 1 मिनट पका लें

Method
● Whisk the eggs with milk, cheese, 1/2 tsp black pepper powder, 1/2 tsp chilli flakes, a little salt and finely chopped coriander leaves.
● Heat the butter in a nonstick pan, then add chopped potatoes in the shape of onions and round chips and let the potatoes cook.
● Add long chopped capsicum, green chillies, green onions and add remaining powdered spices and cook for 1 minute.
● Now put the whipped eggs on top of the prepared spices and reduce the flame and cover the pan and cook for 3 to 4 minutes
● Now here you have to work with a little trick, because the sopenish omelette is very large and you cannot easily flip it, so open the lid of the pan, place a plate in it and lift the pan upside down on the plate, then on the omelet plate. Will come out, then gently put the omelette back in the pan from the other side

Onion – 2 big
Fennel seeds ½ tsp
Green Chilli – 2
Ginger garlic paste – 3tsp Red chilli powder – 1 tsp
Turmeric powder – ½ tsp
Coriander powder – 2 tsp
Garam masala 1 ½ tsp
Curry leaves – few
Oil – 5 Tbsp
Salt
To Marinate
Kashmiri chilli powder 1/2 tsp
Turmeric powder – ½ tsp
Coriander powder – 2 tsp
Lemon juice – 1 tsp
Salt
Method:
Mix all the ingredients to marinate. Add little water into it and make it to a paste
Add chicken pieces into it and mix well
Pressure cook it till chicken is cooked. (I usually go for 1 whistle and immediately remove the cooker from stove. Wait for the steam to go completely and open the cooker)
Heat oil in a pan and add sliced onion and curry leaves.
Cook with the pan covered and stir in between till onion turns golden brown in color (It takes approx 15-min for this step)Add ginger garlic paste, green chilli and saute for 2-3 min.Add all spice powders, salt and saute for 2-3 min.
Add cooked chicken (all contents of cooker) and mix well.
Cook with the pan covered in medium flame for 5-6 min or till oil starts appearing on top.
Serve hot.

All Purpose Flour / Maida – 1 cup
Cornflour / Cornstarch – 1/2 cup

Ginger Garlic Paste – 1 tblspn
Water – 1/4 cup
Oil for deep frying
For Sauce:
Butter – 3 tblspn
Ginger – 2 tblspn finely chopped

Onion – 1 large sliced thinly
Green Chilli – 2 slit
Capsicum / Bell Pepper – 1 sliced
Tomato Ketchup – 1/2 cup
Green Chilli Sauce – 3 tblspn
Vinegar – 2 tsp
Soy Sauce – 1 tsp
Red Chilli Powder – 1 tblspn or to taste
Water – 1/2 cup
Black Pepper Powder – 1 tsp
Spring Onion a handful finely chopped
Salt to taste
Sugar – 1 tsp
Method:
Start by frying some chicken. Take chicken in a bowl, add in flour, cornflour, salt, pepper, soy sauce, ginger garlic paste and water. mix well. Set aside for 10 mins.
Heat some oil for deep frying, drop the chicken in and fry till golden, drain and set aside.
Now make the sauce, heat some butter in a pan, add in ginger garlic and fry till golden.
Add in onions. green chillies, salt and sugar. Toss well.
Add in capsicum and mix well.
Add in red chilli powder, soy sauce, green chilli sauce, vinegar, ketchup adn mix well.
Add in water and cook till oil separates.
Add in fried chicken and toss well.
Add in pepper and spring onion. Mix well.
Serve hot.

Mutton: 300 gm
Tomatoes: 3 Big Size

• First heat oil in a pan and fry the green chillies.
• When the color changes, take out the green chillies from the oil and keep aside
.
• In the remaining oil, fry the drained mutton pieces to a golden brown color till almost cooked.
• Remove the fried mutton pieces from the pan and keep aside.
• In the remaining oil, splutter the cumin seeds and add the ginger-garlic paste, onion paste, chopped tomatoes and curry leaves. Saute for 3 Mins in a low heat.
• When the tomatoes are nicely mashed then add the garam masala, red chilly powder and required salt.
Saute in a low heat and add the fried mutton pieces and bay leaves and mix it well.
• Add yogurt and cook till oil shows on the top of the surface.
• Add coriander powder, fried green chillies and close the pan with a lid.
• Cook in a low flame for few Mins and till the gravy acquires a thick consistency.
• Kadai Mutton is ready to taste and garnish with the coriander leaves at the top of the curry.
• Serve hot with the rice or rotis.

3 medium size onions very finely chopped

INSTRUCTIONS
Onion Mixture Topping:
In a bowl, add the very finely chopped onions, finely chopped green chillies, finely chopped coriander leaves, salt according to taste, mix it well.
For The Onion Dosa:
Take a tawa/gridle and heat it.Rub the tawa with an onion slice.
Take a ladle full of batter and drop it at the centre.From the centre spread the batter in a circular motion and make a round dosa.
Add the onion mixture as the topping all over the dosa.Smear oil all over the dosa and also at the corners of the dosa.
Let it cook for few seconds on medium flame.Fold the dosa and remove it.Serve the dosa hot with any side dish such as chutney or sambar.
Continue making dosas of your choice with the rest of the batter.

Take around 200 gms of paneer and a bowl of fresh green peas.
Toast the paneer and peas on low heat in a spoon of ghee for couple of minutes.
Fry 2 onions, 6-8 cashew nuts, 5-6 cloves of garlic and a tiny piece of ginger in a spoon of oil. Grinder it to a paste.
Add this paste to paneer. Also add 1-2 spoons of tomato paste, a spoon of jeera-dhaniya powder, shahi paneer masala and 2-3 spoons of chilli powder.
Add 1-2 cups of water and let the curry simmer till the gravy thickens.
Garnish the curry with fresh coriander leaves.

INGREDIENTS OF RAJMA CHAWAL
4 Servings
1 cup red kidney beans
1 cup rice
2 large onion
1 tablespoon garlic
1 teaspoon ginger
2 chopped green chilli
1 tablespoon coriander powder
1 tablespoon cumin powder
1 tablespoon powdered black pepper
salt as required
1 cinnamon stick
1 tablespoon garam masala powder
2 green cardamom
1 black cardamom
2 clove
1 tablespoon black pepper
3 tablespoon mustard oil
1 tablespoon ghee
2 large tomato
HOW TO MAKE RAJMA CHAWAL
Step 1
Wash the rajma and allow it to soak in water overnight. Wash it again and pressure cook with 2 cups of water, salt and turmeric. Once the rajma is soft and squishy remove it from fire and keep it aside.
Step 2
Finely chop onions and keep aside, grate the tomatoes and keep them aside. Make a paste of ginger,garlic and green chillies.
Step 3
In a deep bottomed pan, add oil, when it gets heated add green cardamom, black cardamom, cinnamon, clove, peppercorn. Once they become fragrant, add onions and cook till they are golden brown.
Now add the tomatoes and cook on high for 4-5 minutes. Add ginger- garlic-chilli paste, cumin powder, coriander powder and black pepper powder.
Cook till the spices become fragrant and oil starts leaving the sides of the pan. Now add the rajma and one cup of water. Mix well and cook covered for 10 minutes.
Once done, add the ghee. You can garnish with coriander leaves. Your rajma is ready.
Step 4
To make a steamed rice, boil 1 cup rice with 5 cups of water. Once the rice is soft, strain and discard the water.
Spread the rice on a plate and allow it to air for 2-3 minutes.

Ingredients
100 gms + 1 tbsp all-purpose flour or maida
100 gms powdered sugar
100 gms unsalted butter
100 gms Tutti Frutti
2 Large Eggs
1/2 tsp Baking Powder
1 tsp Vanilla essence
1 tsp Lemon zest (OPTIONAL)
Instructions
In a clean dry bowl add the Butter beat at medium speed with the help of a handheld beater.
Add the powdered sugar and cream very well until the color changes to pale white, the mixture turns fluffy & airy.
Next, add one egg at a time beating well. The batter at this point will turn into a pale yellow color. Add the Vanilla Essence at this point while beating the eggs.
Now, in a separate bowl sift the all-purpose flour or maida & the baking powder together, whisk well.
Next, add the above Maida or allpurpose flour + baking soda mixture into the wet ingredients in 2-3 parts.
Continue beating at medium speed until the flour or maida incorporates well into the wet ingredients.
Now, add the 1 tbsp maida to the tutti fruttis & mix well with a spoon to coat them well.
Add the tutti frutti & the lemon zest and fold with the help of a rubber spatula in a clockwise motion, taking care not to knock out the air from the batter.
Grease a 8×5″ baking tin with butter or oil. Line it with a piece of parchment paper.
Pre-Heat the oven at 350 F or 180 C.
Pour the batter gently into the greased tin, even it out on the top with the help of a rubber spatula. Tap the tin to knock out any air bubbles in the batter.
Bake it at 350 F or 180 C for 30 mins or more. Until a toothpick comes out clean when inserted in the cake.

Mix paneer / chenna , milk powder and condensed milk in a heavy bottomed pan, and cook on a low flame till mixture thickens .
after about 10 minutes,
the mixture comes together. spread it on a greased dish or on a dish with butter paper lined.
allow it to cool and set
.,meanwhile sprinkle the slivers of nuts on top, press gently .

♧INGREDIENTS
■ Tablespoons butter, divided
■ 1/4 cup sweet corn, I used frozen corn which I soaked in warm water for 5 minutes before using
■ 1/4 teaspoon black pepper powder
salt, to taste
■ 1/4 cup chenna / grated paneer
■ 1 cup chopped spinach [75 grams]
■ 1 teaspoon all purpose flour, also known as maida
■ 1/4 cup milk
■ 1/2 teaspoon italian seasoning, or to taste
■ 1/4 teaspoon red chili flakes, or to taste
1/4 + 1/8 teaspoon garlic powder, skip if using fresh garlic [if using garlic use 1 large clove]
■2 cheese slices, optional
■ 2 multigrain tawa rotis/ phulkas
♧ INSTRUCTIONS
● Heat 1 tablespoon butter in a skillet. Once the butter melts, add corn and saute for 1 minute. Add black pepper, salt and mix.
● Add chopped spinach and cook for 30 seconds till leaves wilt.
● add chenna or grated paneer cook for 5 min , to dry up the water.
● Then add all purpose flour (maida) and saute for 1-2 minute till it's all roasted.
● Add milk, keep stirring. Add italian seasoning, red chili flakes and garlic powder. Stir to combine. [PS: you may use a large clove of garlic in place of garlic powder. Saute garlic with butter before adding the corn in that case].
● Let it all cook for 2 minutes or till milk dries up and mixture looks like a paste.
Spread the prepared spinach corn mixture on phulkas. Top with cheese slices (if using).
● Melt the remaining tablespoon of butter in a grill pan. Toast till wraps are crisp from both sides.
● Cut into slices and serve these spinach corn sandwich with any sauce of choice.

Ingredients
2 and 1/2 cups Maida
2 tbsp Vegetable Oil
1/2 tsp Salt
Warm water as required
Oil for frying
Instructions
Add maida, vegetable oil and salt in a bowl.
Mix nicely using your finger tip until they are combined nicely.
Add warm water and knead to make a firm dough.
Cover the dough with a damp cloth and keep aside for 20 minutes.
Knead the dough again for 3-4 minutes until it is very smooth.
Heat oil for frying in a karahi.
Divide the dough into small lemon size balls.
Apply little oil and roll the dough balls into 4 inch circles.
When the oil is hot, simmer the heat to medium.
Slip the luchi in the hot oil and gently press until it fluff up.
Flip and fry on the other side as well.
Do not over cook the luchi. They should be very slightly browned.
Remove the luchi on a plate lined with kitchen towel
Serve hot.
