Ingredients
 
1/2 c. cooked quinoa
1/2 c. frozen spinach or kale (or 2 cups fresh)
1 1/2 c. frozen pineapple chunks
1 banana
1 c. coconut milk
1 tbsp. lime juice
1 tbsp. cilantro leaves
1/3 c. cucumber
1/4 c. whole milk plain yogurt
4 pitted dates (optional)
2 tbsp. chia seeds, ground
2 c. ice cubes
 
Directions
 
In a high-speed blender, process all the ingredients for 1 to 2 minutes, or until well blended.
