Quinoa sauce with butternut Squash

Quick Quinoa sauce with butternut Squash !!

Ingredients
 
1 c. quinoa, rinsed and drained
1 1/3 c. coconut milk beverage
2 c. peeled, chopped butternut squash
1 c. shredded carrots
4 tsp. ground flaxseeds
3 tbsp. maple syrup
1 tsp. ground cinnamon
1/4 tsp. ground allspice
1/2 c. chopped dried plums
stevia
1/4 c. toasted walnuts
1 1/2 c. fresh blueberries
 
Directions
 
In a medium saucepan, combine the quinoa, coconut milk, squash, carrots, flaxseeds, maple syrup, cinnamon, and allspice. Bring to a simmer and cook, covered, for 20 minutes. Add the plums during the last 5 minutes of cooking. Stir in stevia to taste and top with the walnuts. Serve with the blueberries.
