Quinoa Sunflower seeds Mix recipe a full meal of nutrition !

Pre-Requestives
 
1/3 c. sun-dried tomatoes
boiling water
2 tbsp. olive oil
2 c. quinoa, rinsed and drained
4 c. water
1/2 tsp. salt
1/2 tsp. pepper
2 medium red onions, finely chopped
2 cloves garlic, minced
1/3 c. golden raisins
1/4 c. grated Parmesan cheese
3 tbsp. salted dry-roasted sunflower seeds
 
 
Method
 
  1. In a small heatproof bowl, combine the sun-dried tomatoes and boiling water to cover. Let stand until softened, about 20 minutes. (Timing may vary depending upon the dryness of the tomatoes.) Drain and thinly slice. Set aside.
  2. In a large skillet, heat 1 tablespoon of the oil over medium heat. Add the quinoa and cook, stirring constantly, until lightly golden, about 5 minutes. Add the 4 cups water, salt, and pepper, and bring to a boil. Reduce to a simmer, cover, and cook until the quinoa is tender, 12 to 15 minutes.
  3. Meanwhile, in a medium skillet, heat the remaining 1 tablespoon oil over medium heat. Add the onions and garlic, and cook, stirring frequently, until the onions are lightly browned, about 5 minutes.
  4. Transfer the quinoa to a large bowl. Stir in the sun-dried tomatoes, onions, raisins, Parmesan, and sunflower seeds. Toss with a fork to combine.
