 Quinoa in Veg Saute Recipe !!

Ingredients
 
1 1/2 c. water
3/4 c. quinoa, rinsed
1/4 tsp. salt
1 tbsp. canola oil
1 onion, cut into wedges
1 lb. asparagus, trimmed and cut in half
1 bunch radishes, trimmed and halved
2 cloves garlic, minced
1/4 c. fat-free, low-sodium vegetable broth
2 tbsp. apricot all-fruit spread
1 tbsp. balsamic vinegar
8 oz. baby spinach
1 avocado, cubed
 
Directions
  1. In a large skillet, bring the water to a boil over high heat. Stir in the quinoa and salt and return to a boil. Reduce the heat to low, cover, and simmer for 20 minutes, or until all of the water is absorbed and the quinoa is tender.
  2. Meanwhile, in a large nonstick skillet, heat the oil over medium-high heat. Cook the onion, stirring, for 3 minutes, or until tender. Stir in the asparagus, radishes, and garlic and cook for 2 minutes. Add the broth, apricot spread, and vinegar and stir for 1 minute to deglaze the pan. Add the spinach, cover, and cook for 3 minutes, or until wilted.
  3. Divide the quinoa and vegetables among 4 plates. Sprinkle with the avocado.
