Ingredients
 
1 1/2 c. minced onion
2 tbsp. olive oil
2 c. minced shiitake mushrooms
1 c. chopped baby spinach leaves
2 c. cooked quinoa
3/4 c. mashed potatoes
1 lightly beaten egg
1/2 c. Parmigiano cheese
2 tbsp. chopped basil
1/2 tsp. salt
1/4 tsp. each chili flakes and black pepper
 
Method
 
Saute 1 1/2 cups minced onion in 2 tablespoons olive oil for 7 to 8 minutes. Add 2 cups minced shiitake mushrooms and 1 cup chopped baby spinach leaves and cook until mushrooms are tender, 2 to 3 minutes. Remove from heat and add 2 cups cooked quinoa, 3/4 cup mashed potatoes, 1 lightly beaten egg, 1/2 cup Parmigiano Reggiano cheese, 2 tablespoons chopped basil, 1/2 teaspoon salt, and 1/4 teaspoon each chili flakes and black pepper. Form into 32 walnut-size balls and arrange on a parchment-lined baking sheet. Bake at 400F until golden and firm, 15 minutes per side.
